Every cake is baked closer to your pickup date, which means what you’re eating is genuinely fresh, not something that’s been sitting around for a week under chemical stabilizers. The trade-off is that these cakes don’t last as long as store-bought ones – and honestly, that’s the whole point. And yes, everything is made completely from scratch. No market premixes, ever. It took me a lot of failed batches to figure out how to get that same soft-in-the-middle, slightly crisp-on-the-edge texture without a single egg in sight. These days I’d put my cookies up against any regular one, any day. Why I Skip the Preservatives Too Here’s something most bakeries won’t tell you outright: preservatives exist mainly to make life easier for the seller, not for you. Longer shelf life, less spoilage, more convenience for them. I bake in small batches instead. It means I use butter, flour, sugar and flavourings that actually taste like something, and nothing gets added just to stretch the shelf life out to six months. The trade-off is simple: my biscuits won’t survive sitting in your pantry forever, but they were never meant to. They’re meant to be eaten fresh, shared with your family, and finished quickly, because that’s how good food usually goes. What’s In Every Batch I’m particular about ingredients. Real butter, not the cheap substitutes. Good quality flour and chocolate. Nothing artificial thrown in to cut costs.
